XI'AN Hand-Pulled Belt Noodles — Classic XI'AN Oil-Splashed Chili Flavor

Stovetop (≈ 9 min)
Step 1. Bring 1500 mL (6 cups) of water to a boil in a pot. Add noodles (PACKET 1) peace by peace to prevent sticking, cook for 7 minutes.
Step 2. Add mixed vegetables (PACKET 4) and cook for 1 more minute. Drain thoroughly and transfer to a bowl.
Step 3. Add sauce, pre-cooked vegetables (PACKET 2 & 3) to the bowl and mix gently.
Step 4. Add chili powder (PACKET 5) on the top.
Step 5 (Crucial final step for an authentic). Heat blended oil (PACKET 6) in a small pan over medium heat (DON'T microwave or bake) before it smokes. Carefully pour the hot oil over chili powder. You should hear a sizzle! Stir well and enjoy!

Originating in Xi'an, Shaanxi over a thousand years ago, Biangbiang noodles were once a staple for farmers along China’s ancient Silk Road — a dish perfected through centuries of everyday cooking. Traditionally made from hand-pulled wheat dough and topped with ground pork, chili oil, garlic, and vinegar, it captures the bold, rustic spirit of northwestern China.
The wide, chewy noodles soak up the aromatic sauce beautifully, creating a hearty, spicy, and deeply satisfying flavor that’s rich in both energy and tradition.
